You should edit the colors in the Fonts & Colors tab in Kate / Kiles config 
page. Configure Editor in Kile > Fonts & Colors
1. "Colors" Tab: Here you can set general colors
2. "Highlighting Text Styles", choose "Markup/Latex" in the combo box. This
   are the colors that appear as RHS values, somehow encoded (would have to
   look into the code). But just edit them graphically.

Make sure you have selected the correct "Schema" on the very top of this 
config page to configure the correct colors.
