I'm not sure that is instant apply together with spinboxes a problem. I mean, 
people use spinboxes to make small changes, if they want big changes, they 
type the new value instead of hitting the spinbox 30 times in a row ;). 
Spinbox with instant apply means that the user hits the spinbox, and he can 
immediately see the results. What if he's unhappy with them? He can either 
click "Undo", or he can move the spinbox one step in to the other direction. 
That would work even if he hit it for like three times in a row. And I think 
that most users would simply move the spinbox to the opposite direction tan 
hit Undo

There would be a problem if the user hits the spinbox with the mouse-button 
random number of times in a short time-period. But does anyone really do 
that?

That is a good idea.

All in all, I support the idea of Instant Apply everywhere (well, almost 
everywhere). It makes the workflow more streamlined and it makes the UI less 
cluttered when we can drop some of the buttons in windows. If the user wants 
to change the window-background (for example), why should he first select the 
new background and then click "OK" or "Apply"? Or if he wants to go through 
several backgrounds to see which one to use, why should he select one, hit 
Apple, select another one and click apply and so forth? Why not simply click 
on the background, and see the results immediately?
