No, you're wrong. "View document source" always opens the currently displayed 
html/xml document in an instance of the kde-wide default text editor.

"Preview in ..." is a list of *all other kparts* that also accept the 
currently displayed document's mime type. katepart only happens to accept 
text/html per chance, that's why it appears as a previewer component. If you 
deinstalled kate/kwrite, your "Preview in" problem would be solved.

I, for example, have three "Preview in" entries for a default web page:
Preview in ->
	Embedded Vim Component
	Editor Component
	MOZILLA

All these kparts accept documents of the type text/html *additionally* to 
khtml which is the default for text/html.

Hence, neither "View document source" nor "Preview in" must be removed from 
konqueror's context menu.
