Ok, so when we create a context using the legacy way, the driver halts X11 ...

You could try to set the "tearing prevention" to "none", but that's just a
random guess.

Did OpenGL compositing (and are you sure it's been GL and not XRender
compositing, eg. because the cube or wobbly windows effect was used) work with
former versions of kwin and/or nouveau?

nouveau_vieux_dri.so is a classic Mesa DRI driver, and not a Gallium3D driver,
because these cards do not have enough shader capabilities to reasonably
support the Gallium3D infrastructure.

Do not file bug reports about this driver.
