The game (just like plain gzdoom - what's the advantage of skulltag justifying
the extremely high cpu load?) only offers me the current native resolution for
the fullscreen mode. If i set 800x600 in windowed mode and switch to fullscreen
i get a tiny game area within the black center of the screen (just like with
plain gzdoom)

This is on 302.17 / GT520

Since skulltag (just as gzdoom, i frankly wonder whether gzdoom has a bsd style
license...) uses SDL for the OpenGL backend i'd say that the SDL version is
more important than the actual game.(1.2.15 here)

There's no difference whether i run OpenGL compositing or not.
