cvs comes standard with Red Hat since way back when.  You don't need to
compile it.

I use CVS extensively at work and have set up many repositories, if
you have questions feel free to ask.

Security issues:  Protect the repository as well as you protect the
source code.  Don't use the built-in pserver stuff, install the latest
openssh and use it as your network transport (export CVS_RSH=ssh).
Make backups.  That's about it.
