Ok, I found an easy way to workaround this problem.
To obtain the old effect, I add "CONFIG -= debug" in the "Custom Variables" tab.

Note that after closing and reopening the project this custom variable is not shown \
any more (but the .pro file is correct).

Another test I did:
manually change "CONFIG -= release" to "CONFIG -= debug" leaving "QT += \
debug_and_release"; the "Configuration" tab now shows "Build Mode" as "Release" also \
if "debug_and_release" is set in the file!
