I record music with 
  sox -t ossdsp -w -r 44100 /dev/dsp -t wav - 2>/dev/null | bfr -m 0 > $1
(thanks to kervel for the hint)
Although I guess you want to remove the buffering done with bfr, if the
'realtime' aspect of the output is important. I think this fulfills all the 
requirements above (assuming your multiple OSS devices are mapped
to different /dev/dsp* devices?).
