I have the same lack of jpg thumbnails but
	HardHat:qtconfig> cd $QTDIR
	HardHat:qt-copy> ls -la plugins/imageformats/
	total 264
	drwxrwxr-x    2 bryce    bryce        4096 Feb 19 10:26 .
	drwxrwxr-x    8 bryce    bryce        4096 Feb 19 09:57 ..
	-rwxrwxr-x    1 bryce    bryce       19341 Feb 19 10:26 libqjpeg.so
	-rwxrwxr-x    1 bryce    bryce      236077 Feb 19 10:26 libqmng.so

qtconfig shows the correct path also.
