Those are only the standard driver provided with CUPS. There's plemty of
other drivers available for almost any printer and supporting much more
features than the CUPS ones. On Adobe site, you can find PPD files for
all PS printers, and with Foomatic and/or GIMP-print you can support 
a lot of non-PS printers even at high resolution.

That's actually what the "Other" button is made for.

The Foomatic driver supports 360 dpi resolution. Internally, it's using GS
with "epson" device.
