if you make your e-mail client show all mail headers, you will see additional information from the mailman. There you will see a line, which reads

List-Unsubscribe: <mailto:gentoo-desktop+unsubscribe@gentoo.org>

So try writing an empty letter to gentoo-desktop+unsubscribe@gentoo.org
