Kinda not exactly security question :-) ....and why aren't you using the 
Exchange for email? Backup of email is important you know and relying on 
psts on desktops is not wise IMHO.

While I think POP pulling into a workstation is silly as you should use 
the power of your server, if you absolutely positively MUST have your 
Outlook on your workstations individually POP AND do Exchange you'll 
want to make the POP be the “main honcho” of the mailbox.

May I recommend multiple domains in SMTP rather than POP?

ALWAYS visit the www.microsoft.com/sbs click on downloads and ENSURE 
you've install all the non WU patches. [okay this part is security related]

Remember SBS 'must' be the PDC and hold all the FSMO roles but you can 
have any number of member servers and additional domain controllers [if 
you want to call it a BDC like NT days... that's up to you] ;-)
