There could be something wrong with your sycoca database
Please logout kde, remove 
/tmp/kde-[username]/
and start kde again.
Run kbuildsycoca from the commandline and edit the mime type again.
If that doesn't work, check the permissions of all the files/directories 
of $HOME/.kde2/ and the file .kderc
