First off, this isn't related to VNC at all.

However, to answer your question - as best as it can be: it depends. The 
problem is that there are multiple ways of making applications for X 
desktops; some of the most prominent, currently, include KDE/Qt (or Qt 
alone), Gnome, and Motif. Each has its own way of specifying fonts.

If you are using a current desktop, such as KDE or Gnome, there are settings 
that can change the default font for the KDE/Gnome applications.

If you are using CDE, again there is a setting (accessable through the toolbar 
at the bottom) to set default fonts.

A way that will affect most applications is change your font path. Some 
systems default to 75 DPI fonts; by changing it to 100 DPI the fonts will 
appear bigger. This is done by looking at the current font path, as reported 
by xset -q, and making sure that /usr/X11R6/lib/X11/fonts/100dpi is before 
the 75dpi directory (the actual path may vary, depending on your 
installation).

There is also a caveat with any method of changing the default font: some 
applications - particularly Motif-based applications - do not adapt well when 
the default font size changes, and display a messed up UI, with overlapping 
or truncated text and/or controls.

However, to give you an answer you can use we need to know what desktop (if 
any) you are using, and what application(s) you want affected.
