First of all, why don't you update to 0.8? Has some nice features. ;)

I think you can change this in the Change Properties box below any
ticket page. You can probably only see this box if you have either
TRAC_ADMIN, TICKET_MODIFY or TICKET_ADMIN privileges enabled for
yourself.

Ah, I'm afraid the only way to do is is to change it in Trac's source
code. Search for trac/Wiki.py, on line 192 (the first line below "def
render(self):") it says WikiStart. Change that to the name of your own
page, and you should be all set.

That's actually kind of funny. I think Trac is not very old yet (and
may be not very mature, even though it works very well!), so there's
no book yet. There may be in the future, though. For now, you'll have
to cope with the mailing list and the Trac wiki.
