It depends on your window manager somewhat.
I mostly use xfce, and I had to change my fonts using an xfce
applet.  But if/when I use kde, setting the font selection
in ~/.sylpheed-2.0/gtkrc like:

gtk-font-name = "Courier 14"

works for me.
