Tenta focar mais em usar alguma ferramenta de gerenciamento de
configuração, como o Ansible, se o problema é o tempo de subir os serviços
nos servidores novos.
Não tem muito o que fazer na migração dos dados, mas se tu levar mais de 10
minutos para provisionar um servidor hoje tu "está fazendo isso errado". :)
