The official way to change the hostname is to re-install Sidewinder.

The alternative, unsupported ? method is to change all the hostnames
in the following files:

/etc/hosts
/etc/hosts.dflt
/etc/netstart.flags

/etc/named.conf.i
/etc/named.conf.u
Relevant zone files in /etc/namedb.i
Relevant zone files in /etc/namedb.u

/etc/sidewinder/sendmail/sidewinder.1.mc
/etc/sidewinder/sendmail/sidewinder.2.mc
/etc/sidewinder/sendmail/sidewinder.c.mc
/etc/mailertable.mta1
/etc/mailertable.mta2
(Please execute 'cf sendmail rebuild' after the change.)

/etc/sidewinder/cm_datafile

You may need to change some more files containing the hostname 
depending on the given configuration.
