To follow-up my own post... some further digging with a colleague has
led us to a possible conclusion that it's being caused by a memory leak
in the Jetty bundled with the v4.1.2 MSI installer (Jetty v10.0.7).
Their view (at https://github.com/eclipse/jetty.project/issues/8266) is
to upgrade Jetty to v10.0.11.
For anyone following along at home, I've raised this as
