Queue group is selected by Squeuegroup rule set in sendmail.cf.
Squeuegroup sample can be found in cf/feature/queuegroup.m4 file in sendmail 
distribution [FEATURE(`queuegroup')].

"The Bat Book (3rd edition)" mentioned by Jose is 1000+ pages thick. It is a 
very good book covering almost every sendmail detail *but* it is not "a crash 
sendmail course". Any serious attempt to study it will consume a lot of time 
[week(s)]. If you understand it in "single pass" you will be *much* better 
than I have been :)
