Yes, I said just copy to wherever you want and open the project from
Quanta. Those informations are not stored anywhere, they are just used to
create the project file.

I'd like to change

Open the project using the new user/password (Project->Open project, type
ftp://newuser@server, navigate to the place where the project is and open
it).
