Laurence, I think you faced some known issues.

About memory leak, it seems QGIS is not the responsible but some plugins
related to digitizing [0][1]. Do you have any of them? If so, disable them
and try to work again. I'm not sure you need to reinstall QGIS nor Windows,
I had this kind of problem with some of the last QGIS versions. Just stay
aware about plugin uses.

Is the issue with mixed attributes the same as reported here [2]? Have you
changed the structure of your layer? With Table Manager plugin, Processing
Refactor Fields or Attribute table/Field Calculator? It may be interesting
to add your experience to the bug report so that dev can narrow this issue.
