Not using NFS isn't an option. I seem to have solved the problem by using
the nfs-kernel-server instead of nfs-user-server (debian packages). I
guess the nfs-user-server has a bug that the nfs-kernel-server doesn't. I
made this change a couple of days ago and haven't got any messed up emails
yet, so looking good.
