NetworkManager has "never-default" connection option (in GNOME
GUI/nm-connection-editor it is under connection properties - IPv4/IPv6
tab - Routes - Use this connection only for resources on its network).
I do not know whether KDE frontend exposes this.

You can us nm-connection-editor utility to create or edit system
connections. They will be visible in KDE as well.
