adouble version doesn't matter.

Hum, with UTF8 you shouldn't get :xx for them, only leading '.', '/' and 
chars without UTF8 value should be escaped (not a lot if any with OSX 
clients).
Right, Samba will mangle them, but you should be able to open, erase, 
copy whatever. Need to double check because there's a bug in samba and 
sometime it might refuse to deal with them.

Are you sure you haven't old filenames from the previous netatalk install?

No, there's an option mswindows which limit the charset to a window 
compatible one but then it's a pain for Mac users.
