Does anyone know if it is possible to set up an individual member of a
list so that they can receive and post mail, but their Email address
does NOT get shown.

"Does not get shown" how, when, where? You could always set up a separate
alias for a person and the alias could be used. Or a "fake" account could
be set up solely for the purpose of allowing reciept and posting of messages
to the list.
The only way I know of WRT Majordomo that list members e-mail addresses
are "shown" is via the who command and the who_access config file setting
can disable or restrict this command. You can also use the noadvertize
config file setting to prevent individual lists from being shown via
the lists command.
