I have tested LinuxMint with Cinnamon, on virtual machine clients
(VirtualBox), and it worked well.

Maybe the hardware of your clients is a bit different from that of your
server.

Anyway, Cinnamon is considered a "heavy" desktop, which is not suitable for
LTSP, unless you have powerful clients.
MATE usually is a better choice.
