Well, obvious recommendation: 

After you install your OS, go to your particular vendor/distributions 
website and update any software packages that have newer versions 
released, ie, the redhat Errata page.  In Redhat's case, I think they 
even have a mailing list about their errata (not sure). 

I personally recommend subscribing to the following lists: 

Bugtraq : send mail to

     listserv@netspace.org
   
   with the following in the BODY

     subscribe BUGTRAQ Fname Lname
     end  

   ('end' tells listserv to ignore other things, like your .sig)

CIAC Bulletin:  http://ciac.llnl.gov/ (For more info)

    send mail to: 

         majordomo@rumpole.llnl.gov

    with the BODY

     subscribe ciac-bulletin
     

CERT Advisories:  http://www.cert.org/  
      
    send mail to: 

          cert-advisory-request@cert.org

    with the SUBJECT
  
          subscribe you@your_email.addr
