Hi Karen
Disabling timing means LP has no notion of where barlines occur, so you do need to \
indicate these with \bar "". These then are places where line breaks are permitted. \
But you might find it better to force line breaks where you want them by adding \
\break as well.
Add
ragged-last = ##f
to the \layout block to force the last line to spread out fully.
As a general point it is usually best not to squash so much on a line that the \
syllable lengths start to control the spacing. I'd set this on four lines with \
\bar "" \break inserted after the notes corresponding to the last syllables of
"dul -- cé -- do",
"He -- væ." and
"cle -- mens."

I've be working on converting a Gregorian chant from 4-line notation to 5-line \
modern notation for service use, and I've stumbled across two problems:
1. Lilypond does not seem to be able to determine line length any more (line 2 of \
pdf). I have to insert a \bar "" to keep it from running off the page (line 1 of \
pdf)
2. Lilypond seems to want to cram the last line in as tight as possible (line 3 of \
pdf) - is there any way to either get a full line - or at least get a bit more space \
so my poor cantor can sing it?
