You could duplicate the mail at the MTA for incoming mail.
It is actually simple:

Create two mail accounts: user@mydom, user-copy@mydom

Go to the /kolab/etc/kolab/virtual.template
Add the entry:

user@mydom        user@mydom user-copy@mydom

This will cause all mail to user@mydom to be sent to user@mydom and 
user-copy@mydom.

At the moment there is bug in the Kolab script that causes the virtual.template
file to be propogated only if there is a change in a user's alias.
So, change an alias. Wait for the changes to show up in 
/kolab/etc/postfix/virtual and then change the alias back. 

(You can also manually merge the changes into /kolab/etc/postfix if you know 
how)

Why do you want to duplicate outgoing mail as well?
