If you want to set the default application for a mimetype/file-type, you can:

1)
- Select a File on Dolphin/Konqueror (in this case a PDF file)
- Go to its Properties
- In the dialog, click on the toolbox icon on the right of the "Type" text
field.
- In this subdialog you can rearrange the preferred applications to open this
kind of files.

or 

2)
- Go to System Settings
- In the advanced tab select "File Associations"
- Search for the desired mimetype ("application/pdf")
- Rearrange the preferred applications
