I'm working on koffice as well as kmail usability and we restructured 
several menus and kpresenter in the 1.3 release got some concepts removed 
and restructured.
We did this and got nothing but positive feedback, save for the occasional 
person who barked because his favorite feature was missing  in action.  
You will always have people that want to keep it the old way.

So, in practice; your assumptions are wrong.  Which is a good thing :)
