OK, just a few thoughts that I have after reading your email.

In any case, use KDE 3.1 and not KDE CVS HEAD (even for KOffice CVS HEAD.)

If you plan to use KOffice 1.2.x, use the branch KOFFICE_1_2_BRANCH and not
exactly KOffice 1.2.1. A few bugs were fixed after KOffice 1.2.1.

KWord CVS HEAD seems to be stable currently. (The only very annoying bug that
I know is that you cannot import RTF files containing tables. (Bug # 54694))

You should perhaps also look at KDE Bugs ( http://bugs.kde.org ) to see if
there are bugs that may annoy you and your users.

Have a nice day/evening/night!
