my suggestion is to allow people using more then one server for the outgoing
email.
[it could be nice to link it to the identity for example]

scenario:
I use an account for personal email across a local isp and an account for
job email across our overseas exchange server. Using only one of the two
smtp servers involved looks not good for many reasons...
