Ad 1: Received: headers are generated by the mail servers and not by KMail.  
There is nothing we can do about it. You should consider using a remailer.  
  
Ad 2: The timezone field in the Date: header is a must. See  
http://www.ietf.org/rfc/rfc2822.txt. Again using a remailer might help.  
  
Ad 3: You can overwrite the X-Mailer / User-Agent header with an empty string  
with appropriate custom headers, e.g. add a custom header with name "X-Mailer"  
and value "". The custom headers are configurable in Configure  
KMail...->Composer->Headers.
