I think I should point out that this is a limitation of plasma, and
not universal.  Windows vista and windows 7, for instance, do provide
a way to interact with the program through the taskbar, either through
applications being able to add controls to the task bar right-click
menu (so-called "jump lists") or by providing interface elements in
their previews (such as multimedia controls).  I am under the
impression that there are requests for both features to be provided by
plasma, but neither has been implemented yet.  So although currently
this is true, this issue could be eliminated by implementing such
functionality in plasma.  It may also eliminate the issue for programs
like Amarok, since minimizing would still allow you to have control
over the application.
