If there were a new option in preferences->color for "Todo Finished Color"
and if the default for that preference was green, then we'd have
  Finished:  black on green
  Overdue:  black on red
  Unfinished: black on white

Not optimum, but is black on green easier to read than strikeout black on white?
Agree that green on white is better.  But I don't find red on black that easy to read either.

Also, since there is an option for overdue todo color, why not a preference
for finished todo color?

Just rambling thoughts..
