And what is the problem?  Aren't there enough visual hints that the todo
is finished?  I guess I don't even see that there is a problem in the first place.
The checkmark, the bar graph.  That's two visual hints.
If the user needs yet-another visual hint (strikeout), I'd say that should be an option.

I don't disagree on your main point about the default settings and usability.
Personally, I'd rather be able to set another font color (of my choice) than have a strikeout.
But maybe that's just me.
