DocuWiki supports syntax highlighting :

also MediaWiki has a plug in that supports syntax highlighting:
http://meta.wikimedia.org/wiki/Syntax_Highlighting_Extension

I have not used any of them my self, but we are looking in to use one of these 
at work.
