Settings->Configure Calendar->Time&Date->Use Holiday Region

The format is defined by an old program called "plan".
The holiday files are stored in $KDEDIR/share/apps/libkholidays/holidays_<region>
If you want the format specification let me know and I will send it to you separately.

Depends on the holiday region you select in the configuration.
Another way is to look at the Holidays variable in ~/.kde/share/config/korganizerrc
