Assuming that the application has already associated itself with a mime type, it isn't that hard to make it the default. While you're in Konqueror, go to Settings -> Configure Konqueror. In the dialog box that pops up, go to the File Associations group. In this section of the configuration, you can open up different mime types, and then change which application is the default for the mime type by moving it to the top of the application precedence order.
