and put a flag variable in the cache which signals "test already done".
Like:

IF(NOT DEFINED GCC_VISIBILITY_TEST_DONE)
   ... do the test
   set(GCC_VISIBILITY_TEST_DONE TRUE CACHE BOOL "Test done")
ENDIF(NOT DEFINED GCC_VISIBILITY_TEST_DONE)
