Though I didn't test it very well, I know, that the OTR plugin of Pidgin
provides an option to log or not the OTR chat. Here [1] you can find more.
Xabber, a mobile client, logs the chat in plaintext. Textsecure (not really
otr, but similar problem) provides an option to store the log encrypted with
password or store it plaintext.
