Because we decided that named sessions would be a better offer than the 
removed project interface. You will notice the Tools->Sessions menu, allowing 
you to get to a previously saved session, or saving a new one.

From the command line options:
  -s, --start <name>        Start Kate with a given session
  -u, --use                 Use a already running kate instance (if possible)
  -p, --pid <pid>           Only try to reuse kate instance with this pid

You can use an alias to make kate always behave the desired way from the 
command line.
