Well, tinkering around some, I was able to get Thunderbird to create the Trash automatically as well as the Sent items once I sent out an email. My issue now is still with squirrelmail which I will pursue later.
Also the autocreateinboxfolders doesn't seem to work on this config either, even with createonpost

Read about the altnamespace option in imapd.conf. You probably want to
turn this on.
