I'm not familiar with spamassaissin particulars, but with DSPAM, I  
have set up a 'spam' and 'ham' email address that pipes the mail  
through a DSPAM retrain utility.  To do that, I set up a new transport  
in postfix's master.cf.  The utility get's the username from either  
the recipient or the sender headers.

describes how to set that up for postfix and DSPAM, if that is of any  
help to yo u figuring it out for spamassasin.
