If you use:   -Tps -Gpage="8.5,11"
then the output will be split across as many pages as it needs.   Then 
you trim and tape the pages back together.

By default each page will get a 0.5 in margin, if your printer can print 
to the edge then also use:  -Gmargin="0,0"
and save on trimming.
