3.6 / 3.7: no.
the pm3d branch of the develoment version 3.8: yes
If you want to take the risk of a devel version (actually
it's pretty stable) you can get it via cvs from
http://sourceforge.net/projects/gnuplot/
http://sourceforge.net/cvs/?group_id=2055
you've to checkout the pm3d branch:
cvs -z3 -d:pserver:anonymous@cvs.gnuplot.sourceforge.net:/cvsroot/gnuplot co -r pm3d gnuplot
^^^^^^^
If you've installed it, you can type
gnuplot> help pm3d
gnuplot> help palette
gnuplot> help mouse
