I assume you're using the "table" terminal . . .

As far as I know, gnuplot converts time/date data to seconds-from-Jan1-2000
(as a float) and never converts it back to timefmt (tic labels can be
written in a timefmt, but nothing else).  There is no mechanism in place
(that I know of) that would allow you to do what you want to do.
