you can use every character which is in the iso_8859_1 character set (on unix,
for others see 'help set encoding'), as long as your terminal supports it. the
degree sign is octal 260, so a label might lool like:
set label 1 "boiling water: 100\260"

for other characters which are not in the character set you use, you could use
the enhanced postscript terminal, see FAQ 4.9 at
http://www.ucc.ie/gnuplot/gnuplot-faq.html
